"Maple Syrup Traditional Tapping" by Debbie Oppermann. Tapping the Maple trees in March to make Maple Syrup is a Canadian tradition with Canada producing 85% of the worlds supply. March is when the temperature changes from winter to spring and begins the flow of sap in the Sugar, Black, Red and Silver Maple trees that are used for the wonderful Maple Syrup. In this area, which is in the country near St. Jacob's and Elmira, Ontario Canada, it is mostly done by Mennonites of which some still prefer the traditional method by boring holes into the tree trunks and collecting the exuded sap in covered pails. The Elmira Maple Syrup Festival in March is not to be missed and draws visitors from far and wide.
