This recipe is a show stopper during the holiday season, and is a nice change from pineapple upside-down cake. Star fruit are easy to find here in Hawaii, especially in the winter when they're usually available in farmers markets. Not only are they beautiful and delicious, but they are packed with antioxidants, potassium and Vitamin C, which can help ward off winter colds and flu. They are also a good source of fiber with only about 30 calories per fruit.
While this cake looks heavy, it really isn't. The starfruit has a distinctive sweet flavor, and add visually to the presentation. The cake is very light with a slight citrus flavor due to the lime zest and juice added. For the recipe, visit my food blog at tastinghawaii.com.

I used to have a huge, and I mean huge, star fruit tree in my yard in Kihei -- the fruit was amazing, but I never did make an upside down cake with them. What a fabulous idea. Utterly beautiful and I bet it tastes better than it looks! L/F Featured in Hawaiiana. Aloha nui, James!!
