Artistry In The Kitchen



I love to cook and often create my own dishes. Yesterday I made something new with ham leftover from New Year Day dinner.
It consisted of a piece of cornbread cut horizontally in two, caramelized onion with cubed ham and an apple aioli sauce.
I covered the bottom slice of cornbread with the caramelized onions and ham and drizzled the apple aioli sauce over it,
then covered it with the top piece of cornbread and did a second layer of the onions and ham and more apple aioli sauce and
garnished with chopped parsley. Everybody loved it.

My simple Apple Aioli Sauce recipe:
4 tbl. spoons of unsweetened applesauce
4 tbl. spoons of Mayonnaise
1/2 teaspoon ground cloves

Mix ingredients together and let it set 30 min before serving.

I do, and luckily my kids and friends love my food.

I have some set recipes, and several others that come out differently every time. Unfortunately, no written recipe, its more a question of sniff the spices, see if they combine with the meat or match the carbohydrates. Very like mixing colours to paint, but mixing smells to imagine final taste.

Jim - split pea? Navy Beans or Pintos - although I favor the Great Northern's. Wine - something drinkable. LOL

Yup, split pea soup has ham bone cooked with carrots, potatoes, onions, and a pinch of marjoram. I like to cook with wine, sometimes I put it in the food.

I once made up a dish using things that were in the cabinet that day,

one lb. fettuccine pasta
one pkg Knorr brand Alfredo sauce mix.
one can of Asparagus spears
one can of Pink salmon... fresh would work too if you cook it first.

I mixed it all together and it turned into one of our favorite meals

RD, lentils would probably be a reasonable substitute, but your bean and ham soup suggestion sound delicious.

I like to try lots of different things but I tend to follow recipes and not fool around much. My husband is far more creative in the kitchen and is a very good cook. I've been pretty busy this past year so he's been cooking dinner far more often.

My Husband has pretty much taken over the kitchen in our old age. He makes a mean gumbo and loves to chop al the vegetables that he uses in the gumbo. Actually he just loves to chop. Anything. I painted the below picture and hung it in our kitchen in honor of his love of chopping ( onions, celery, bell peppers, sausages, your finger if you get too close : ) )

Regina, I love gumbo. Is that a beet in the painting? Watch your fingers.

David, I have a friend who says if it weren't for Trader Joe's and microwaves he might starve to death.


The wind from the blizzard woke me this morning. We are snowed in and I'm already planning breakfast; cooked apples more leftover ham and fried eggs. Maybe another pan of cornbread.

I do dabble and play with my food. But would not mind someone cooking for me for a chance. Even better if that someone likes to experiment and I get to try out the tasty end results.

Iris, it is nice to have someone else cook for you. That doesn't happen very often in my house. But we do go out to eat frequently.

Judith, cooking for one is not the same as doing it for others.
If you have other single friends that like to cook, consider forming a
dinner club with them and rotate going to each others home for a meal.

Yes, love to create in the kitchen. It pretty much always turns out good, good stuff in, good stuff out. But I always forget to write it down, so I do a lot of original one of a kind meals ;)

Bill. I'm like you, I make most of it up as I go along, cooking by intuition and usually make a great dish, but don't write it down, Most of the time when I try to recreate it, my spouse says. "It's not as good as the first time."Lately I've been trying to do more measuring and writing it down.

Several years ago I won second place in a Chili cook-off. Three things that made my Chili stand apart were the addition of some chunky chopped tomatoes, black olives and balsamic vinegar. If you want to jazz up a basic chili, try adding them. Do you have fresh Ideas for standard recipes??
