These biscuits were made by Australian and New Zealand women for the Australian and New Zealand Army Corps (ANZAC) soldiers during World War I and were reputedly first called "soldiers biscuits," then re-named "ANZAC biscuits" after the Gallipoli landing. The recipe was created to ensure the biscuits would keep well during naval transportation to loved ones who were fighting overseas. These biscuits keep well because they contain no egg.

ANZAC biscuits recipe: 1 cup flour (I used 1/2 whole wheat, 1/2 regular), 1 cup rolled oats, 3/4 cup coconut, 3/4 cup brown sugar, 5 Tbsp. butter, 3 Tbsp. boiling water, 3 tsp. golden syrup, 1 tsp. baking powder Pre-heat oven to 325 degrees. Sift flour into a bowl. Add rolled oats, coconut and sugar. Melt butter in a saucepan, add syrup and water. Add baking powder, allow to foam and pour immediately into dry ingredients. Mix well, then take small pieces of mixture and press out thinly on greased cookie sheets, allowing space between each for spreading. Bake in a slow oven, as they burn easily. Watch them carefully. Bake for about 12 minutes. They are cooked when they are nice and golden. Enjoy! ~A. Babineau
