Deep in one of the worst droughts ever in the desert southwest I came across this agave in tall, dry grass during spring near Dragoon, Arizona. The agave family is a signature plant of the deserts in the southwest United States and Mexico. One species, the Blue Agave is notably cultivated to give us the liquor we call Tequila.
As the agave plant matures it begins to develop a high sugar content and pulpy heart from which will sprout a tall flower stalk. Native Americans knew to harvest the agave before the flowering cycle. Shorn of its needle sharp leaves, the pulp of the heart was roasted to convert the starches to edible sugars and eaten as a significant part of their diet.
Once the agave flowers it is at the end of its life cycle. Until then these succulent plants dot the southwestern deserts of North America. This one is about four feet tall and five feet wide, and each of its leaves end in a needle sharp tip that will painfully pierce even thick leather.
